02/28/2012 – Good Eats

29 Feb

Got up and headed to South San Jose to do the stairs. I didn’t want to be stuck inside on a treadmill today and since I signed up for the Fight For Air Climb, why not go to the stairs early and get some practice in. It was fun and I got in 10 rounds. Definitely felt good to be doing something outside with the fresh air. And look at the awesome view!

Anyways, today ended up being a bad day of eats. Not that I ate non Paleoish foods, just that I had too much of it and there was stuff out of the of meal plan. Confession at the end.

6:30AM(S1) – After the stairs, I had my usual SFH Whey PWO Protein Powder with 1 tbslp of Flax seed.

8:20AM(B) – Different day, same breakfast. No picture. 5 egg white omelet with 1 egg, 1 slice of Ezekiel bread, and 1/2 tblsp of Justin’s Classic Almond Butter.

11:15AM(S2) – Close to 4oz of sweet potato plus 3oz of ground beef as a yummy snack.

1:15PM(L) – Lunch was a salad plus 4oz of SousVide Supreme Chicken breast and roasted broccoli.

3:40PM(S3) – 3oz of Dave’s Albacore Tuna and 12 macadamia nuts. Ya, I ate 12 instead of 10. Don’t know what got into me.

6:15PM(D) – Dinner was super yummy and I probably ate too much salmon. Actually I ate too much in general today. SIGH. Gotta keep those hunger pains at bay. Pan fried salmon in a bit of ghee with garlic mashed cauliflower and sauteed kale.

Alrighty, my eating did not stop there. When I got home, I had a pork leg roast that was sitting in the fridge for a couple days. Nom Nom Paleo had been fighting with her pork leg roast because it was so dry after cooking it, but of course she found a way! So, I used her recipe, and decided to make this for hubby. I made the marinade a few days ago, and it was just sitting in the fridge. Why not roast it for hubby so he can have some protein to eat when he’s at work. He’s been working 12 hours lately. Yes, baseball season has arrived. Who would of known it would make the house smell so freakin’ GOOD! I’m serious, sooooo freakin’ GOOD!

After getting both kids to bed by myself, I checked on the roast and had to wait another 40 minutes for it to finish. I made the huge mistake of shredding it and taking a bite. All of a sudden, I couldn’t stop and I continued shredding and eating, shredding and eating. By the time I was finished, my tummy hurt and my mouth was filled with salty yummy sauce. Turned out, I should of cut the marinate in half, because I only had 2 pounds of leg roast(the recipe called for 5 pounds). The meat was so soft, not dry at all, that I couldn’t stop eating it! Finally I put all of it in Tupperware and tucked it away in the fridge. Not sure if this will set me back this week, but I gotta do some extra workouts or something. I woke up a bit swollen from all the salt I consumed. So there you go…I should not give into late night munchies. Or I shouldn’t of cooked the damn roast at all and let my hubby starve. ;-)

02/27/2012 – Good Eats

Got up early for my WOD at CFPA. I had to eat my breakfast and it was the same as yesterday. ;-)

4:00AM(B) – 5 egg whites plus 1 egg omelet. 1 slice of Ezekiel bread and 1/2 tblsp of Justin’s Almond Butter.

6:00AM(S1) – SFH PWO they Protein + 1 tblsp of flax seed

Went to CoffeeWOD after and had a half cup at Starbucks.

9:30AM(S2) – WOW, I was hungry. 3oz of beef plus 3.6 oz of sweet potato.

12:00PM(L) – I went out with a coworker today for lunch. I was just going to get an Ahi Salad, but knew I was missing my big carb portion. So I texted my nutrition coach asking her what I should eat. She said sashimi, but since it was my high carb day, I could have white rice if I wanted to. Oh hell, WHY NOT! Primal King Mark Sisson said white rice is okay if I have no gut issues with it. I wanted to make sure that I didn’t go overboard, so I didn’t order a sashimi lunch which would usually come with a bowl of rice. I wanted to limit the intake and not have any chance of over eating. I got 2 salmon hand rolls and 1 hamachi hand roll. No fancy sauce in it, just fish rice and seaweed with a side salad. SO FREAKIN’ GOOD. I can’t make this a habit, but it was satisfying.

3:00PM(S3) – I bought some Wild albacore tuna from Dave’s Albacore at the Campbell Farmer’s Market on Sunday. Geez, these cans are expensive, but that’s what you get for quality right? I’m not sure they taste much different from Trader Joe’s tuna, but then again I don’t think Trader Joe’s tuna is wild. Anyways, the small can was 3.25oz, so I only ate up to 3oz. Good stuff!

6:15PM(D) – Dinner was sort of rushed. Thank god I had food prepared already. I just had to dunk my frozen chicken breast into the Sous Vide to thaw. 4oz of chicken breast plus garlic mashed cauliflower, roasted broccoli, and a little bit of sauerkraut. Delish and satisfying!

02/27/2012 – Last Week of Snatches

28 Feb

Today is our last week in this cycle, and we worked on Snatches. I didn’t do so well today. Form was all off, and I couldn’t match my PR from last week. I wish I had more time to work on the progressions, and be capable of doing this lift in a WOD at 95#. Someday…someday.

Power Snatches: 63#(3)-73#(3)-78#(3)-73#(3)-83#(F)

I went back to 73# again because 78# was just horrible. I wanted to work on form as well and make sure my setup was right. Tim was constantly reminded me that I need to be tight and not let the abs collapse. I thought I could do at least 1 rep of 83#, but that didn’t happen. Ggggrrr!

Our WOD today was fun:

  • How ironic that I was watching the Toes To Bar Progression Video by Gymnastics WOD coach Carl P before I went to bed last night. Unfortunately, watching that video didn’t help me much. It just reminded me to practice and practice. I usually swing to0 much and can’t control my hips as my legs as it come flying down from the bar. However, the toes to bar wasn’t the hard part. It was the pass thrus. The jumping lunges were fast, but I accidentally put my hands on my thighs as I was doing them, and Tim yelled “NO HANDS”. I redid the reps. ;-)

    Result: 10:36 RX’d

    02/26/2012 – Good Eats

    Today was a busy day as usual. I made breakfast for myself and decided to just make breakfast for the entire week. I wanted to finish before we headed off to the Campbell Farmers Market. So, I ate breakfast a little late.

    8:30AM(B) – Egg omelet(5 eggs whites and 1 egg) plus 1 slice of Ezekiel bread and 1/2 tbslp of Justin’s Almond Butter.

    10:45(S1) – Sweet potato plus 3oz grassfed ground beef

    1:30PM(L) – Lunch was super late because I was prepping all our veggies for the week. Hubby will be coming home late all week next week, so I won’t have time to really cook dinner. Lunch was Sous Vide Chicken breast (4oz) with salad and 3.6oz sweet potato.

    I skipped my mid afternoon snack because we were out and I didn’t bring it with me. I decided just to suck it up and just eat dinner.

    6:00PM(D) – 4oz steak with mushrooms, bok choy, and kale. Unfortunately, I didn’t stop there. I has too many macadamia nuts. Too many.

    Aaaah, food prepped and ready to kill this week. I can’t wait to see what WOD 12.2 will be. I might do it twice. Once at work with the guys and then at the box. :-)

    02/25/2012 – CrossFit Games Open WOD 12.1

    I signed up for the CrossFit Games Open this year because I love being part of the CrossFit community. I love the competition with others, the competition with myself, but most of all, being able to get together with my box and just have a good time doing what we love.

    Today was the first weekend where we spent 7 minutes of burpee hell together. Everyone suffered through the 7 minutes, fought through the burn, and ended up being proud of their score. I paired up with Carmela and she is freakin’ awesome! I rarely see here at CFPA because we go to different classes, so it’s great to see her when we there are events like this.

    Truthfully, there was a lot of strategy going on in my head. People had told me to do 8 burpees then stop for 10 seconds. Others told me to go all out. Others said to just pace yourself and keep moving. I watched Carl P’s breakdown of the WOD and he had some great tips that I practiced on Thursday night. I definitely have to work on the hip snap, but I think this video helped me tremendously. Every time I landed on my feet, they were hip width apart, not the wide ass stance that I normally do. I didn’t look at the target at all, and didn’t rest too much. I wanted to keep moving, and wish I hadn’t stopped at all to take my breathe. I just wished I had more time to practice the skill. I could live with 81. I know if I did it again, I’d get more. :-) Too bad I didn’t have a chance to do it again. Nonetheless, I’m happy and so proud of everyone else!

    02/25/2012 – Good Eats and CrossFit Open WOD 12.1

    Today we did the CrossFit Open WOD 12.1 at CrossFit Palo Alto. I joined the other gym members and grinded out 7 minutes of burpees. Burpee hell some would call it. I definitely had to fuel myself properly for this workout. Food wasn’t really different, just had to have lunch before my workout.

    8:00(B) – I made Lil’ Munchkin some bacon and eggs for breakfast. I love that he loves protein. I think breakfast is his favorite meal of the day. I made myself an omelet, 5 egg whites + 1 egg. I seasoned it with Penzey’s Northwood Seasoning to give it a bit of a smokey flavor. Toasted up 1 slice of Ezekiel Bread and 1/2 tblsp of Justin’s Classic Almond Butter. Delish.

    10:30(S1) – I spent the rest of the morning making spaghetti and meatballs for Lil’ Munchkin and hubby’s lunch. I also made garlic mashed “potatoes”(courtesy of NomNomPaleo) by steaming some cauliflower and garlic. I pureed it with some GrassFed Ghee, and that was that. Afterwards, I munched on my sweet potato and 3oz of GrassFed ground beef.

    12:00PM(L) – I had to eat my lunch quick so it could digest before I did the WOD. I didn’t want to puke chicken out. Instead of broccoli, I had the garlic mashed “potatoes”, and a side salad.

    2:00PM(S2) – SFH PWO Whey + flax seed

    4:00PM(S3) – Some tuna plus macadamia nuts

    6:00PM(D) – I ended up not having salmon tonight because we went out to dinner with my parents. We headed to our local mexican restaurant, La Milpa. While everyone ordered their enchiladas and spanish rice, I had the large Cocido soup. It’s basically a veggie soup with chuck roast. So good. I just had the zucchini and beef. They gave me lots of carrots which I didn’t eat. Carrots are more of a starchy veggie, and I think I’m suppose to avoid them at night.

    I’m pooped! Good Night people!

    02/24/2012 – Good Eats

    Woke up at 4AM this morning to eat breakfast. Here goes…

    4:00AM(B) – Egg omelet with 1 slice Ezekiel Bread 1/2 tbslp of Justin’s Almond Butter.

    6:00AM(S1) – PWO Whey Protein plus 1 tblsp of flax seed.

    10:30AM(S2) – 4oz sweet potato and 30z grassfed ground beef

    2:20PM(L) – I had meetings so I was in a rush to eat lunch and leave. Chicken salad with 4oz sweet potato.

    4:10PM(S3) – 3oz tuna with macadamia nuts

    7:30PM(D) – Salmon with kale and Kabocha squash.

    02/24/2012 – Friday’s Workout

    Today Trish was coaching our class because Tim was out of town learning from Mr. Underground Strength! I hardly see Trish because I can never make it to her classes, so it’s great to be in a class that she coaches in. Today we worked on our final week of Front Squats.

    Front Squat: 93#(3) – 123#(3) – 133#(1)

    I don’t know what happened, but it seemed like Jackie and I had no time to finish the rep scheme. I was hoping to get a higher PR from last week, but there was definitely no time. And I didn’t want to rush things and hurt myself.

    Onto our WOD:

    3 Rounds for Reps:

  • 1:00 OHS(45/35)
  • 1:00 Burpees
  • 1:00 Knock Downs
  • 1:00 Shuttle Run
  • 1:00 Rest
  • I was happy to see burpees, because I could actually PRACTICE!!! Unfortunately, I couldn’t practice underneath a bar, but just practicing them helped. For the first round, I got 18 burpees. Same for the 2nd round. Fatigue set in in the 3rd round and I only got 15. I felt like I was not fast enough with the Hollow Rocks. And I even no repped myself in the first one because I used my feet and hands to get me off. I was just way off balance, and needed to reset myself. In the end I got 65 reps the first and second round, and 61 reps the last round.

    Result: 187 Reps RX’d

    02/23/2012 – Good Eats

    I got up super early this morning, and all I could think about was how many burpees I was going to be able to do in 7 minutes. Yes, the first CrossFit Open WOD 12.1 is a 7 minute AMRAP of burpees. So I hustled to my work to gym to practice the movement for a bit. I did it for 2 minutes and got 27. I was getting gassed already.

    Afterwards, I jumped on the treadmill and walked for a full 55 minutes. Uphill, downhill, fast pace, slow pace, you name it. I broke a sweat, but not much of a sweat. I didn’t want to push myself too much today because I still had a WOD on Friday, and I might end up doing the open WOD twice. Here’s how I fueled myself through the day.

    8:15AM(B) – Egg omelet with 1 slice of Ezekiel Bread and 1/2 tblsp of Almond Butter. Yum.

    10:50AM(S1) – 4oz sweet potato with 3oz ground beef. Double Yum.

    1:15PM(L) – Today was no sweet potato day because it was a cardio day. So I subbed the sweet potato for broccoli. 4oz chicken breast with salad and roasted broccoli

    4:00PM(S2) – 3oz of canned tuna from Trader Joe’s and macadamia nuts

    6:15PM(D) – Salmon plus roasted broccoli and kabocha w/ a little bit of kale.

    BTW, my work had a bake off today, and I made Melissa J’s Paleo Pumpkin Gingerbread as part of the “Special Diet” category. There was only 1 other entry in the special diet category which was Vegan Brownies. Of course, my cake was made with all natural ingredients. The vegan brownie was made with flour, sugar, and all the other wonderful artificial stuff. Kinda weird. Nonetheless, I won in that category! $60 amazon gift card going to DIAPERS…oh yea! LOL. Here’s a pic of everyone’s dessert. Everything look tempting, but of course I stayed away.

    After we put the kids to bed, hubby was helping me with my form on the burpees. We were dissecting Carl P’s breakdown of the movement, and I’m definitely going to spend time practicing this. Gotta remember to do the Mobility WOD before I do the workout. Open up those damn tight hips of mine. All HIPS baby!

    02/22/2012 – Good Eats

    Here’s how I fueled my Wednesday. First things first, got up early to eat breakfast
    4:00AM(B) – You’ve seen this one before. An egg omelet made with 5 egg whites and 1 egg. 1 slice of Ezekiel bread plus 1/2 tblsp of Justin’s Classic Almond Butter.

    6:05AM(S1) – After our WOD, I had my SFH PWO Whey Protein + 1 tblsp of Flax Seed. Then I enjoyed 1/2 cup of coffee at our CoffeeWOD.

    10:15AM(S2) – My snack was a 4oz sweet potato plus 3oz of GrassFed Ground Beef. Delish!

    1:50PM(L) – I was starving when it finally came time to eat. I would have eaten earlier, but I got sucked into meetings. My lunch was a salad with 4oz of chicken breast and 4oz of sweet potato.

    3:45PM(S3) – Since I didn’t try to make any protein pancakes last night, I didn’t have a mid afternoon snack. Plus I was going to have a late dinner, so I needed to eat something. All I had were cashews at my desk, so cashews were going to go in my mouth. 1 oz of them. ;-)

    When I got home, I had to multi task like none other. I played with the kids, but Lil’ AMRAP down for a nap. Then I enlisted Lil’ Munchkin’ to help me bake a Paleo Pumpkin Gingerbread Cake for my company’s Bake Off that is happening tomorrow. It’s an event that is part of Engineering week. How awesome is that?! Anyways, there is a category for normal baked goods and a category for “special needs”. I guess I’m in the special needs category, why not right?! I can’t even eat any of the stuff, but why not let people try grain free/gluten free desserts made with all real/high quality ingredients! I didn’t have time to make the frosting, and honestly I don’t think the cake needs it. My hubby was the taste tester and he loved it. :-)

    Once I got that in the oven, I had to get hubby’s dinner ready. Two days ago, I was prepping some pork shoulder steak that I got from Marin Sun Farms. At least that is what I think it was. Anyways, I used R and Nom Nom Paleo carnitas recipe looked delish, and I wanted to try it. So the pork was sitting in the SousVide Supreme for 24 hours already. I took it and quickly pan-fried them in bacon grease. Smelled so good.

    Hubby said it was a bit too salty. Maybe I brined it with too much salt. But he devoured it.

    Once hubby got home, I quickly left to meet with one of my BFFs for dinner. We met at Pasta Pomodora, which had a good selection of healthy eats. I ordered the salmon salad and it came with lots of veggies. I also ordered a side of broccoli that was sauteed in garlic, hot peppers, and olive oil.

    Nothing tops the day like good conversations over good eats. Enjoy!
