08/24/2102 – Good Eats

Since my workout wasn’t very strength intensive, I decided to eat my low carb meals instead. Unfortunately, once I got to my desk I was busy off the bat and couldn’t eat anything. I went to Dish Dash for lunch and got a chicken Mediterranean salad. It was delicious and exactly what I needed.

Around 3, I had some steak and braised kale.

For dinner, I broiled some salmon with gravy and green beans. There’s some chicken on the plate but that was for lil’ munchkin’

08/23/2012 – Good Eats

24 Aug

I started off with a 45 minute walk uphill on the treadmill. Within the walk, I had a 10 minute uphill sprint. 30 sec on, 45 sec off x8. Killer.

Eggs, cauliflower rice, and steak. Best breakfast ever, but still hungry!

Ate again around 10:30. Ground beef with cauliflower.

I almost skipped out of YOGA, but I’m so glad I went. Felt good, but hurt too. Shoulders are super super tight. It was a great time to relax, unwind, and take a nap.

Mid-afternoon snack was some chicken breast, 3 strips of sirloin and cabbage. I got home and had 2 Paleo Stix.

Dinner was salmon with braised kale and carrots. I didn’t eat all the salmon or the chicken beneath it. Chicken was for lil’ AMRAP. Ended the night with 1oz of macadamia nuts. Almost ate more, but went upstairs to go to bed instead. PHEW!

Since I’m behind on blogging my eats, let’s just do a recap in pictures because I don’t think I had anything extra today. :-) That means it was a good day.

Oooh, during lunch we had a BBQ so I can fatty ribs and chicken. Plus a side of fruit. The ribs were small, chicken was small…BORING BBQ. Still hungry!

08/21/2012 – Good Eats

I strolled out of bed at 5:30 and went for my 40 minute walk. No extra activity today, just walking walking walking.

Once I got to work, I ate my eggs and egg whites with roasted cabbage, cauliflower rice, and avocado.

Lunch was a bit late because I went to Costco to pick up some necessities. My friend and I ate at Bamboo Leaf on a whim. I ordered the grilled pork and shrimp(sans noodles), extra lettuce. Yummy! I’m sure glad I can enjoy my Vietnamese food without the gluten.

That bowl wasn’t really big enough. I had my 3rd meal around 3ish. Ground beef and cauliflower rice. So satisfying.

When I got home, I had to figure out what to do with all the seafood and meat I got. I bought a tray of Ahi, and was going to sear it. Then I thought of Hawaii and how we had Ahi Poke almost everyday. DUH STEPH! Why not make Ahi Poke! I mixed together some Coconut Aminos, Coconut Vinegar, sesame oil, garlic, and red pepper flakes. I cut up the avocado, green onions, and ahi. Mixed everything together, and you have Ahi Poke. Nom Nom!

I had a small serving plus my dinner which was pressure cooker chicken with green beans.

My fat serving was macadamia nuts. That’s all folks. Super simple, super easy. Back on the clean eating train!

Happy Monday Happy Monday! Feeling spent after our workout, but totally stoked that I PR’d Helen. :-)

Here’s how I fueled my day. Spinach egg whites with cauliflower rice.

08/18-08/19 Weekend Recap

Aaah the weekend. I love it yet it’s so tiring. Trying to fit in family activities, personal activities, while getting prepared for the week ahead is hectic. But it beats just sitting around the coach, being a lazy butt, and watching TV. I miss those days. ;-) Sometimes!

I was able to go to Catalyst Athletics for their open session weightlifting class. Fitbomb and K came along, so it was cool just to hang out, lift, and learn. We worked on snatches(squat snatches). I have no clue what weight I did. It was light, and I was too intimidated to put on more weight. Lots of good tips thought.

Hubby and I had a dinner date at Espetus. It’s been a long time coming, so we finally got to eat without being rushed to get out of the restaurant. Everything was soooo good! I had lots of sirloin, beef wrapped in bacon, chicken wrapped in bacon, chicken hearts, grilled shrimp, grilled pineapple, and beef ribs. Yup, that’s them cutting beef ribs right in front of our face.

I stayed gluten free on our date. PHEW!

Here’s what I ate on Sunday. I honestly had no time to cook breakfast and lunch. I had my greens and basically fasted until 4PM. When we finally had time for ourselves, we headed to The Counter, and I got a bison burger bowl with a fried egg and avocado.

Then when I came home, I had a couple of these suckers. Fresh broiled sardines. Nom.

08/17/2012 – Good Eats

18 Aug

Today was my off Friday but we didn’t do anything exciting because I Lil’ Munchkin’ came down with a fever last night. It’s a mild fever, but we wanted to play it safe and keep him inside. Too bad because the weather was beautiful.

Food was simple and good.

For breakfast, I had an 8 egg white omelet with veggies, sweet potatoes, and a cup of blueberries.

I got hungry around 11:30 and had a flank steak with broccoli and carrots.

I had a chicken breast salad around 4 which I forgot to take a picture of.

One of our friends came over and we ordered a couple pounds of shrimp from this cajun place. I had a few shrimp with this bowl of flank and veggies. I didn’t add any other fat because the shrimp was covered in garlic and butter. I didn’t suck on the shell, so once I peeled it, most of the sauce was gone. Trying to limit fat on workout days.

Day 57 of 100 Day Push Up Challenge done. I’m going to Catalyst to their weightlifting session tomorrow. Hopefully I can learn a few more things!

08/16/2012 – Good Eats

Today’s my virtual Friday, so I wanted to get into work early, walk on the treadmill for a bit and do work.

I did speed intervals at 9.0 mph for 8 rounds, 30 secs on 90 seconds off. Then I walked uphill the rest of the time until 45 minutes hit. I practiced double unders after and did my 56 push ups for the day. I’m glad I finished and was ready to get to work. I walked into the locker room and realized…I FORGOT MY FREAKIN’ SHOES! Argh. Wednesday I forgot my tennis shoes, today I forgot my shoe shoes! Dammit. So much for getting into work early. I showered, changed, and drove back home to get my sandals. Sigh. At least I finished my workout right?!

Here’s how I ate for the day.

Breakfast was egg whites plus 2 eggs covered in veggies.

I scarfed down my 3rd meal right before I left work to attend Lil’ Munchkin’s Luau at school. Salmon and green beans.

Keepin’ it simple and easy today. Hopefully tomorrow and the weekend will be the same. :-)

08/15/2012 – Good Eats

Here’s a recap of what I ate on this fine Hump Day! I grabbed the wrong container this morning, and it did not contain my breakfast that I made the night before. No fear though, my work cafeteria can make me a veggie egg white omelet. Yes…yes, I know egg whites aren’t very nutritious compared to the yolks, but I need the protein more than the fat on training days. Remember, eat for your goals!

BTW, I had sweet potatoes in the container that I left at home, and no my work did not have any sweet potatoes. I had to get 1/2 a cup of dried oatmeal from my coworker. I need my starch for the day.

I don’t know how to make oatmeal. It spilled all over!


Lunch was chicken breast with homemade gravy and veggies.

Mid-afternoon meal was ground beef with cauliflower rice.

Dinner was chicken breast with more gravy and veggies.

Day 55 of the 100 Day Push Up Challenge done, and I did not count the time trials as part of the push ups. ;-)

08/14/2012 – Good Eats

Aaah back to work and back to the routine. I really don’t have any good food prepared this week. I sous vided some meat, and put a chicken in the slow cooker this morning. That way I have lots of protein for the rest of the week.

Here’s how I cleaned up my act. Breakfast was 2 eggs, 3oz of ground beef with broccoli and kale.

My coworker and I did 20x20m Sprints for our workout. I forgot my shoes, so we did it on the volleyball court where there was sand. Then we did 3 rounds of 50m tire flips. It was fun to just get out and move.

I grabbed lunch at my work cafeteria which SUCKED. I got some meat in tomato sauce with steamed cauliflower and raw spinach. I had a tablespoon of almond butter to go with it, but it still left me starving.

I left work early so I could go to Trader Joe’s and pick up some groceries. I stocked up on veggies, sweet potatoes, and more eggs.

Once I got home, I quickly made myself another meal. Grassfed Paleo Stix with raw bell peppers and cucumbers. I drizzled EVOO over the veggies.

For dinner, I had 3oz Rib Eye steak with sauerkraut and roasted brussel sprouts. I also had a small piece of chicken from the slow cooker.
