Whole30 – Day 12

I spent most of the day inside with my little munchkin’. It was pouring almost all day, so whenever he took a nap, I either cooked of did some work. Yes, I had to work on my day off!

Here’s a rundown of my Whole30 eats.

Breakfast: 2 fried eggs with some cauliflower fried rice, roasted portobello mushrooms, and roasted sweet potatoes. I think I’m going to have to make different sides for next week.

Munched on nuts and beef jerky and fruit throughout the day.

Lunch: Leftovers from the night before…Cabbage “noodles” with shrimp

Dinner: A bowl of grass fed beef stew

I spent most of the day preparing the beef stew, making sure I had the right veggies, and that the meat would thaw in time. I’m glad I cooked something up, because we usually end of going out on a Friday evening.

Short and simple…Day 12 in the bag!
