Whole30 – Day 30(08/30/11)

Yes, I’m still chugging along even though I haven’t posted meals for the last half of my Whole 30. It’s my last day of eating squeaky clean Paleo, and let’s just say it was a struggle. I’ll do a summary in my next post, but I just wanted to check in with everyone.

I haven’t been working out lately, so nothing new there. I did 10 burpees yesterday, and I think I’m going to do 20 today. I’m trying to commit myself to the 100 day burpee challenge. That’s the least I can do right?!

Anyways, a Boston Pork Butt is currently roasting for dinner right now, great way to end the Whole30. Can’t wait to chow down on that. Till my next post people! ❀

Whole30 – Day 15(08/15/11)

Today is the day hubby goes back to work full-time. We’ve decided to let lil’ munchkin’ go back to Grandpa’s house for half a day, so I can give lil’ AMRAP the attention he needs. Before today, Lil’ AMRAP was doing great. He eats every 3 hours, naps well(with me holding him), and sleeps well at night(except for some gas). Lil’ AMRAP decided to do a complete 180. I had no time to go downstairs and make breakfast or wash dishes or do anything! I found 5 minutes here and there to quickly put a lunch together or get a Primal Pac to snack on. It was crazy! Luckily, before everyone got up for the day, I started stuffed the slow cooker with some Beef Crosscut shanks, using Nom Nom Paleo’s recipe.

Anyways, I think I had a Primal Pac around 11. When I finally was able to get my lunch together(tuna salad with 2 hard boiled eggs), I scarfed it down within 5 minutes. It was quick, simple, and YUMMY! I also had leftover bok choy and bell peppers, so I got my greens in!

By 2PM. my Dad dropped off lil’ munchkin’ and I was stuck with two kids. AAAAHHH! Lil’ AMRAP was so fussy, I had to let him CIO for a bit while I tended to lil’ munchkin’. Lil’ AMRAP was not a happy camper, and it made me think that he might have silent reflux. We’ll see how he does in couple days.

For snacks, I munched on lots of grapes, because that seemed like the only thing that was readily available to me.

I forgot to take a pic of dinner, but it was 2 pieces of the beef crosscut shank with veggies.

First Post Baby WOD – 08/14/11

After seeing Nom Nom Paleo and Fitbomb at the Mountain View Farmer’s Market on Sunday, I felt like I needed to get a workout in, and see if I was ready to actually get my body to do work! I’ve been wanting to do something…anything…for the past week. Working out just keeps me sane, and gives me a burst of energy. A few days ago, when I was lurking on the mainsite, I saw a WOD that was short, quick, and “looked” easy!

12 Minute AMRAP of the following:

  • 400m Run
  • 5 Deadlifts
  • It was about 4pm, and I got lil’ AMRAP down for a nap. Hubby was having problems with him all day, so once I got him down, I took advantage of the time to quickly get the workout in. I stretched, warmed up with a few sets of 95# deadlifts, and then tried to find out how heavy I could go. I put on 135#, and WOW…that was heavy. Heavy enough that I noticed. Since, it was only 5 deadlifts, the point of the workout was to go as heavy as you can, so I added 20# to the bar, with a total weight of 155#. GEEZZ!! 4 weeks off can totally kill the STRENF! It was really heavy, that I needed the extra bounce on top to get to the finally position of the deadlift. OUCH! Oh well, let’s do it!!

    Mind you that I haven’t worked out at this time in FOREVER!!! The last time was probably when I was doing WODs at Crossfit SV. Anyways, it was just hot, and I had to run in the heat. BLEH!! Thank god hubby and lil’ munchkin’ were out there cheering me on, because I would of quit during the first round. I ran around the block and it took me 2:20. Probably not fast, and I’m not sure if it’s 400m or over 400m, but pretty close. Once I got to the bar, I was literally gasping for air. I never strung together the deadlifts.

    It was a tough WOD, and totally gave me a reality check. I’ve lost strength. I have to work hard AGAIN, to get back to where I was. And…it’s going to take time. SIGH! But, if I love CrossFit as much as I say I do, then I will get there. πŸ™‚ It’s my happy place.

    Result: 3 rounds + 400m Run + 1 Deadlift

    Next up is The Giant Race(08/27) and Fight Gone Bad(09/17). I got a lot of training to do!!

    Whole30 – Day 14(08/14/11)

    I love Sundays because I get to go to the Farmers Market and buy FOOD! Because you all know I love to eat. πŸ™‚

    I got up in a hurry trying to get lil’ munchkin’ ready so we could get out of the house by 830 to make it to the Mountain View Farmer’s Market before the crowds came. I quickly fried up some bacon and eggs for the kid and he loved it. I had some eggs and a small bite of Applegate Farms bacon too!

    After buying a whole bunch of veggies, fruits, and meats from the market, it was non stop with the babies! If I’m not feeding one baby, I’m trying to play with the other. If I’m not trying to put one kid to sleep, im trying to put the other one down. Constantly on the go, so how could I ever find the time to eat! Lol…im not complaining though, these are the best kids eva!

    Hubby went to go buy some in-n-out for lunch, they messed up on my order. There was cheese in it! I can’t eat cheese, because I’m doing Whole30, which means no dairy! Blah, so that whole burger went to waste, and I had a primal pac and a can of sardines for lunch. I know, not the best thing to eat, but again….No time to make anything fancy. I also munched on the yummy grapes that I bought at the farmer’s market. So crispy, love it!

    I could not get to cooking anything until 5ish. I quickly seasoned some cauliflower with curry and turmeric, and threw that in the oven. Then I marinated the flank steak I defrosted i the morning with garlic powder, pepper, chili powder, and some sea salt. Hubby stir fried some bok choy and bell peppers together, and there you have it…DINNER.

    Day 14 in the bag! Wow I can’t believe I’ve made it this far! Too bad I didn’t weigh myself before I started. Till tomorrow peeps!

    Whole 30 – Day 13(08/13/11)

    Finally a Saturday, but right now everyday is the same to me. This day is only special because hubby is home. :-). Anyways, I think I just had a fried eggs for breakfast and a coconut avocado smoothie, which i sipped on throughout the day and did not finish. Nothing special and no pic.

    By 2pm i had snacked on two small primal pacs already! I told myself, only one a day, but i guess it aint happening today! We were going back and forth about taking the kids to Santana Row for a family outing, Hubby had to go get fitted for a tux and we’d get lunch there too. We finally decided to go and I chose to eat at Plutos. I love this place because their salads are made fresh, and you can put lots of good ole MEAT on it. However today I just decided to get a meat platter(roasted turkey and tri tip) with a side of veggies. The veggies were steamed, but had feta cheese on it. so, I picked out the cheese and ate around it. I didn’t even finish the veggies, because it tasted like they put butter on it. Boo! I also had a few pieces of sweet potato fries that I bought for lil’ munchkin’ too munch on.

    For dinner, I didn’t really eat anything besides Watermelon. Hubby made a bowl of spaghetti for himself, and I just wasn’t hungry. I know snacking isn’t good, but that is all I have time for nowadays! Lol.

    Whole30 – Day 12(08/12/11)

    Another day another whole 30 challenge. I started off by making some eggs for lil’ munchkin and I to eat. I didn’t have any greens on me, so I’ve been lacking with the veggies.

    We all took a trip to Starbucks later that morning so I could get some tea. I heard camamille tea helps bring in breast milk, and it did sort of work. Once I go the kiddies in for their naps, I quickly made a tuna salad with my homemade mayo. No greens again! Bad steph!

    I munched on a primal pac, watermelon, and seasnax throughout the day.

    When dinner time rolled around I didn’t have anything prepared. Hubby and I always go back and forth as to where we want to eat. It’s hard finding a kid friendly place that is Whole30 compliant as well. We talked about going to the counter, but didn’t want to get stuck in the Santana Row shenanigans with two kids under two. Then wanted sashimi, but we got lazy to go before the restaurant gets crowded. We finally decided on BBQ, and hubby picked it up near our house. I told hubs to get me chicken, tri tip, and ribs with no sauce.

    I ate A LOT! And this time I did have veggies. I reheated some broccoli and roasted portobello mushrooms from the previous night! Yummy!

    Whole30 – Day 11(08/11/11)

    Honestly I don’t remember everything that I ate. I know it was Whole30 compliant, but also had a lot of snacking in there with primal pacs, seasnax, and jerky.

    Let’s just say Day 11 is in the bag!

    Whole30 – Day 10(08/10/11)

    Wow, so my day started off by me making a horrible mess in the kitchen. Obviously I don’t know how to put a blender together because I wasted 2 coconut milk cartons! I was pouring the coconut milk in to make a Coconut Avocado Smoothies, and it was just oozing out of the bottom. The pieces weren’t screwed on right, and it took me three tries to get my smoothie! BLEH!

    Besides the smoothie, I had 2 fried eggs for breakfast. I was pretty busy all morning, and didn’t eat lunch until 1. I warmed up the last of the Zucchini noodles with meatballs…it was still delicious!

    I snacked on a Primal pac, strawberries, & pineapple. We are running low on fruits…not sure if I should go to Costco and pick up a watermelon and more duck!

    Anyways, my parents came over for dinner because my cousin from Austin was in town. They brought over some Vietnamese food, while I ate some braised short ribs with carrots and spinach. I forgot to take a pic because it was so hectic at the house.

    I’m not sure if I’m getting enough food for excess milk supply. If I eat more, you know what I would rather be eating..a cookie! Lol! So I’m trying not to go off track and focus on my goals. I really want to get a WOD in too. I’m really itching to exercise, it’s just finding the time is hard. All I need is 20 minutes!

    Whole30 – Day 9 (08/09/11)

    This is going to be a quick recap of Day 9 of my 3rd Whole30 journey.

    Breakfast was a small bowl of chicken veggie soup. Hubby made breakfast for lil’ munchkin’, and he fried up an egg for me as well, in bacon fat! YUM!

    For lunch, I quickly put together an avocado with tuna salad. I made homemade mayo the other night and wanted to use the mayo asap. Too bad the tuna salad was a little bland. I didn’t have any apples or celery to make it crunchy. The avocado salad idea came from my fellow blogger, Fit Daffy.

    To get me through the day, I also had a small Primal Pac, watermelon, Seasnax, and jerky. LOL – I’m breastfeeding OKAY! Give me a break.

    And for dinner!! So excited that I made Mini Shrimp Cakes from Jen’s Gone Paleo! It turned out delicious. Such a great recipe, and now I have ideas on making other shrimp dishes like this. Hubby said it was a bit salty, and I think that comes from the Old Bay Seasoning. Maybe I’ll put less in next time. I paired some roasted broccoli and sweet potato fries with the shrimp cakes.

    Whole30 – Day 8(08/08/11)

    One week down, a few more to go! Let’s see how I got through my Whole30 today.

    I started the day by making dinner. I felt like I cooked a whole bunch of stuff today, but really I didn’t. I purchased a pound of Italian Sausage from Full of Life on Sunday, and decided to make meatballs out of them. I had some extra ground beef leftover that was sitting in the fridge as well, so I rolled that meat up too. I basically took Nom Nom Paleo’s Spaghetti and Meatballs recipe, substituting spaghetti noodles with Zucchini noodles.

    Once I got everything going for the meatballs, I fried up a few eggs for me and lil’ muhckin’. I topped the burger with a fried egg and added some roasted broccoli to eat for the greens. As lunch rolled around, I had some chicken veggie soup while feeding lil’ munchkin’ his lunch.

    There wasn’t much chicken in the veggie soup, so I ended up consuming a bag of Organic Roast Beef deli meat from Applegate Farms. I had half an avocado with the roast beef as well. It’s a great snack when you are in desperate need of something to snack on besides fruit…but I did snack on fruit as well πŸ˜‰

    Dinner rolled around, and I couldn’t wait to try the Zucchini noodles. Let me tell you…it definitely tasted like noodles. Maybe it was because of the wonder peeler that I had, which made the texture of the zucchini taste exactly like noodles. Not too thin, and not too thick!

    For snacks, I had some Seasnax, Primal Pac, and watermelon. Yes – I’m hungry! It’s probably because I’m trying to produce extra milk for lil’ AMRAP and my energy level is close to 0! Babies need to adapt quicker!! LOL. J/K.
