08/14/2012 – Good Eats

Aaah back to work and back to the routine. I really don’t have any good food prepared this week. I sous vided some meat, and put a chicken in the slow cooker this morning. That way I have lots of protein for the rest of the week.

Here’s how I cleaned up my act. Breakfast was 2 eggs, 3oz of ground beef with broccoli and kale.

My coworker and I did 20x20m Sprints for our workout. I forgot my shoes, so we did it on the volleyball court where there was sand. Then we did 3 rounds of 50m tire flips. It was fun to just get out and move.

I grabbed lunch at my work cafeteria which SUCKED. I got some meat in tomato sauce with steamed cauliflower and raw spinach. I had a tablespoon of almond butter to go with it, but it still left me starving.

I left work early so I could go to Trader Joe’s and pick up some groceries. I stocked up on veggies, sweet potatoes, and more eggs.

Once I got home, I quickly made myself another meal. Grassfed Paleo Stix with raw bell peppers and cucumbers. I drizzled EVOO over the veggies.

For dinner, I had 3oz Rib Eye steak with sauerkraut and roasted brussel sprouts. I also had a small piece of chicken from the slow cooker.

I was starving today! I couldn’t figure out why, whether it was the coffee I had or I just didn’t eat enough breakfast. Then I remember…100 Burpees…for time. Cardio blast.

I had egg whites with sweet potatoes, cauliflower rice, and half a banana.

For lunch I went to The Counter and had a Bison Burger Salad with half a serving of sweet potato fries.

Sunday was a rest day, but I end up standing all day. We go to the Farmer’s Market in the morning, I play with the kids in between prepping the entire week’s menu. Here’s what I had to eat…

I’m so behind on blogging, I just want to post pics of what I eat so I can report back to my nutritionist, Jen. I did a barbell complex today and it was fun! Got me all sweaty. Today was extra carb day, meaning that I had a carb serving at every meal except dinner.

08/03/2012 – Good Eats

Today’s my off Friday, but I still went into work to do some things. Here’s how my eats went.

For breakfast, I had an egg white omelet with sweet potatoes, sauteed garlic kale, and strawberries.

I was starving by 12PM, but didn’t have my lunch with me. Once I got home, I quickly ate my Thai ground beef with kale and another sweet potato. MmmmMMmm!

I was still starving after I ate my tiny lunch. I think it’s because I didn’t have enough veggies. I scarfed down a serving of raw bell peppers and a Paleo Stix pack.

For dinner we went to Chipotle. I got a chicken salad with salsa and some guac.

08/02/2012 – Good Eats

I’m on an almond butter kick right now. Most of my fats were from Justin’s Classic Almond Butter. Good stuff! If you haven’t tried it, you are missing out.

I woke up and walked around the neighborhood for 45 minutes. These walks are good for me, and I feel refreshed afterwards. I try not to look at my phone the whole time I’m walking, so I either have a Pandora station on or I listen to Robb Wolf and Greg Everett’s Podcast. These guys are really entertaining and spit out a lot of knowledge on health and lifting.

Anyways, after my walk I got home, hung out with the kids and headed off to work. I ate my breakfast at work, and it was an egg scramble with spinach and veggies. I drizzled some EVOO on my veggies and 1/4 of an avocado!

I had a lunch meeting at work and they were catering sandwiches. I definitely was not tempted by the sandwiches because they came from the cafeteria at work. I ate my lunch before I went to the meeting. Thai Basil Stir Fry with more veggies. I had 1/4 of an avocado and a small little scoop of almond butter just so I wouldn’t be tempted with anything at the meeting.

Before I left work, I ate my 3rd meal which was overcooked london broil with more veggies. Almond butter was my fat serving.

For dinner I had a 5oz salmon with roasted zucchini squash and sauteed garlic kale.

Day 42 of the Push Up challenge is done. My goals with the push ups are to do half of the number unbroken. So yesterday I did 20 Pushups unbroken, and today I did 21 push ups unbroken. Tomorrow I’ll do 23 push ups unbroken, and we’ll go from there.

Tomorrow is my off Friday but I still have to go into work for a bit. We are going on vacation, so I want to make up some hours. Hope you guys had a great day with healthy eats. 🙂

July came and went, lots of birthdays and BBQs, and now we are in the last month of summer. Sigh! Time goes by way too fast. Here’s how I ate on my “high carb” day.

Once I got to work, I munched on my spinach egg white omelet with 4 ounces of Kabocha Squash and strawberries.


Last night I had made a ground beef thai stir fry inspired by Everyday Paleo. It was sooo good! So tasty and had a lot of spiciness from the Siracha. Now Siracha isn’t as clean as I would like it to be, but I didn’t use too much. I should try looking for a Siracha recipe that doesn’t have all that junk in it. Or if my Nom Nom Paleo friend could make one, that would be great. 😉

Before I ate my third meal and left work, I decided to go work on some heavy deadlifts. Ya, bad idea. I wasn’t really hungry afterwards, but once I got my hand on my food, I couldn’t stop eating. I basically combined my third and 4th meal together. It consisted of some veggies with london broil, then a packet of Steve’s Original Paleo Stix. Definitely not a good decision to go to heavy deadlifts if I don’t have a big meal planned afterwards. The only picture I took was of the Kimchee Cucumber that I got for the Korean Market.

Another good day. I did eat a little bit more protein for dinner, but stayed clean as I could be.

Let’s start off with the morning. I stayed home and took a 45 minute walk around my neighborhood. Weird how a 45 minute walk can warm a body up. I hang up with Lil’ Munchkin’ before he had to leave for school. Once I got to work, I ate breakfast.

Salmon CousCous with 1 tbsp of Justin’s Classic Almond Butter and Baked Kale Chips.



Lunch was 4oz Chicken Breast with braised cabbage and more kale chips. I only ate half the bag this morning. My fat serving was 1tbsp of almond butter, or close to 1tbsp.

For my 3rd meal, I had 4oz london broil with braised cabbage. I finished the kale chips too. Today was almond butter day, so I had another tbsp of it. Yummy!

No picture of dinner because we had friends over. We ordered 3 pounds of shrimp from a new Cajun restaurant in the neighborhood called Sea Port. I had probably 7-8 shrimps(without sucking the sauce) and then a couple pieces of london broil. For my veggies, I just had more cauliflower couscous. I didn’t have any fat with me, but I’m sure the shrimp made up for it.

That’s it! Good day I think. Day 40 of the 100 Day Push Up Challenge done!
